Does anyone else roast cherry tomatoes for use on sandwiches and a side for breakfast?

I used to roast tomato slices on a low heat until they are partly caramelized and firm. Goes well on anything.

Yes! I make them weekly and use in scrambled eggs, salads, toss with a little pasta for the toddler's dinner, etc.

Roasting concentrates the flavor. Perfect for less than perfect fruits.

I do this with kale and make kale chips.
