Help us eat more beans

Would like to start eating more beans, ideally as part of a main dish. We eat them in chile and a chicken black bean corn and salsa crock pot dish, but need more ideas. We like to use the crock pot or bake. When I serve them as a side they do not seem to get eaten.

Bean salad (millions of recipes online), add them to pasta/quinoa/veggie salads, I eat seasoned beans and rice with avocado on top pretty often too.

We are eating sauted white beans a lot lately. Soak and cook your beans, drain. Heat olive oil in a pan, toss in beans and let sizzle for a while then move them around a bit. When they get a little crunchy looking with little browning bits toss in salt, pepper, a little parmesean if you like, and some lemon juice. If you are going whole hog (so to speak), cook bacon in the pan before you add the beans, then do your beans in the bacon fat and crumble the bacon into the beans at the end. My six year old son hoovers these, bacon or not.

The other night I made a bow tie pasta and chick pea dish. It was basically just these two ingredients tossed with garlic, kale, pepper, a little lemon juice and grated fresh parmesan cheese. Even my picky teens ate it. It was fast and easy too!

I LOVE this lentil recipe and I add chickpeas to it for more depth. It is fantastic, so delicious and could be vegan if not for chicken broth (I am an omnivore- just saying- it is a pure, delicious and healthy recipe).
