what to do with leftover caramelized onions?

Soup - milk/cream, broth, herbs, maybe some mushrooms or some cheese...and good bread/

Depends on the quantity left over - omelet filling/ pizza topping/ grilled cheese filling if small quantity, or would toss into a soup pot with other aromatics as a base for a vegetable soup.
If you have a large quantity, I'd use it to make a quiche or french onion soup.

All great ideas! They also freeze well for later!

Food processor and then freeze in ice cube tray
Then you can add to sauces, souks, recipes ect

Yup, i always make extra when I'm doing it and freeze to add to quiche or burgers. later

Layer it on a flatbread, top with roasted butternut squash, blue cheese. Bake. Then top with arugula, walnuts and truffle oil.
