Depends on the quantity left over - omelet filling/ pizza topping/ grilled cheese filling if small quantity, or would toss into a soup pot with other aromatics as a base for a vegetable soup.
If you have a large quantity, I'd use it to make a quiche or french onion soup. |

| Layer it on a flatbread, top with roasted butternut squash, blue cheese. Bake. Then top with arugula, walnuts and truffle oil. |
