what to do with leftover caramelized onions?

Use them on sandwiches and on a spinach salad. Yum.

They're a good hors d'oeuvre on crackers or toast rounds with blue cheese. Toasted walnut crumbs optional.

Mix with equal portions of cream cheese and sour cream for homemade french onion dip - great with crackers, bread, veggies!

Top rice with them like in arabic cooking. You can mix lentils with the rice too. But you need a lot fo carmelized onions for it to be good.
