Recipe for thick cut boneless pork chops

I have some of those giant pork chops from costco thawing for dinner tonight. Any suggestions on a low-carb recipe? (I usually do italian-style breaded, but my husband on the no carb bandwagon this week)

Just salt and pepper them and fry em up in a little olive oil and butter. Next time buy bone in; this style is unbelievable with good bone in chops.

Ps don't over cook them.

I marinate them ahead of time in lemon juice, lemon zest, garlic, thyme, salt, pepper. Grill them and do not overcook.

I know it's a recipe for chicken, but I've used it several times on pork and it is great. You also do not need to marinade it as long as is suggested in the recipe with pork. I've also used this recipe for sauteing the pork chops (get a nice brown crust) and then finishing in the oven.
