| Maybe chicken parmesan? That way if it is a bit dry, it is still in the sauce. Easy enough to just reheat in the oven if a larger platter or the microwave if just 2 portions. |

This is my go to recipe and it's never dry.
Lightly coat chicken breasts in seasoned flour. Lightly sautee until golden brown. Dump into a casserole or baking dish, add whatever seasonings you like (I like garlic, pepper and rosemary). Add 1/2 cup of white wine or 1/4 cup lemon juice (your preference) and 1/2 cup of chicken broth (I liked the boxed organic kind). Bake at 400 degrees for about an hour. Moist and flavorful. Enjoy! |
