What do you serve for Christmas morning breakfast? The last few years, we've done a breakfast casserole (sausage, eggs, and cheese mainly), but I am open to other ideas. Things I like about the casserole are that we can make it the night before, it can bake while we're opening gifts, and everyone can eat at the same time. Things I don't like are that it does take time the night before to cook/brown the sausage and it COULD be healthier. I usually serve it with a fruit salad to help balance it. I'm open to other ideas. I guess we usually eat breakfast around 9:00 AM.
Our big meal is Christmas afternoon... like 1:00 or so. Christmas Eve is usally something simple. We make pancakes and French toast year-round, so they aren't super special. Also someone would have to be the "cook" and miss out on festivities. Or everything would get delayed. I think when I was a kid, it was just cold cereal, which is easy, but not really "special." it will be 3 generations (us, the kids, my parents.) |

I have made this frittata (Ina Garten recipe) for Christmas morning breakfast a few times, and it is delicious (but not healthy, so there's a downside).

Another thing I adore is cinnamon rolls. I have a recipe for making them in my bread machine -- haven't tried it yet but we'll see! |
| Our go-to: scrambled eggs with cheese, cinnamon buns, sausage patties grilled outside (gives them an amazing flavor!), orange and grapefruit segments, and mimosas. Can't wait!! |

Its not healthy at all but I dont consider Christmas morning a time to be concerned about healthy breakfast!

Eggnog French toast. You can place the triangles on the plate so they look like Christmas trees and add berries as decorations.

Mexican eggs Benedict (English muffin, Canadian bacon, Migas, queso) and mimosas. Not sure it's the right fit for everyone, but we love it. And I grew up having to wait until after breakfast to open presents, so don't mind putting my kids through the same exquisite torture.

I normally make my wife's favorite, which is homemade waffles. It's a pain to make the meringue for the waffles, but so worth it.
