This is a nice recipe, a spinach pie, but I personally think it is more brunch-like:

I don't make my own crust, though, I just top it with a thawed ready-made crust and use the pie pan that came with the crust. (If anyone wants, I can post the recipe with the US conversions so you don't have to figure it out.) |

Huevos rancheros Beans & rice Veggie fried rice - with eggs & sometimes tofu (google moosewood curry fried rice) Various stuffed pre-made ravioli Eggplant parm Quinoa stuffed peppers I made a great wild rice, squash, and pecan pilaf the other night that could have been a main dish too. |

Gnocchi. Pumpkin gnocchi is great. And what's that Italian dish made from spinach and ricotta that's a bit like gnocchi? Anything from the book Plenty. Great unusual vegetarian dishes and good for inspiration. Stuffed portabellos served with mash, red wine gravy and thyme. Shepherd's pie made with lentils. Great for a cold day and you can make it in advance. |

I recently used this recipe as the base for a meal that could easily be made vegetarian by omitting the chicken.

I also added almost an entire 10 oz jar of pesto. That was the real star ingredient. I found that I needed a little less flour and a little more milk than called for, as the cheese made the mixture quite thick. The recipe got rave reviews; will definitely make again. |
b/c of you, PP, i made this dish and did spinach instead of mushrooms as you siggested (but i left the sundried tomatoes in and i forgot about the pesto - but will try that next time) and got RAVE reviews from the fam (2 yr old ds ate 5 helpings). Just wanted to say thanks for adding this to our rotation! But it uses 4 pots - that martha stewart is a crazy lady. |
