stuffing wars

So, my MIL is complaining that I made the stuffing from scratch and it didn't come from a Stove Top box.

Really.

Where's the wine?

My dad is whining that I am baking it on the side rather then in the bird...

MIL sautéed the celery and onions and let them sit out on the stove/counter in broth or something all day two days ago so I'm not going to even eat the stuffing.

My DH is making a Quinoa and kale stuffing. That's taking low carb too far.

I have Celiac disease and won't even make gluten free stuffing! We just have no stuffing. Gluten is a necessary ingrediant for somethings (stuffing, pizza, and bagels).

It turned out not to be too bad- cornbread stuffing. Needed lots of gravy, though.

My step mother can make a pretty mean gluten free pizza (uses something like fresh bread in 10 minutes a day or something like that) but even she scoffs at GF stuffing

It's possible to make a good GF stuffing! I used Udi's bread, toast and put in processor to make small pieces.

I used this recipe as a starter:http://udisglutenfree.com/recipes/udi-s-gluten-free-stuffing-recipe/

I adapted it some by halving the recipe by only using one loaf of their GF Whole grain bread and chopping the onions/celery really small and sautéing them first before mixing them in. Came out pretty good, reminiscent of the good old days when I could eat gluten.

I ate gluten free bread last week that made cardboard taste good.

We made a GF dressing this year with sausage and quinoa that was really good. I thought it was going to be terrible but it was better than the traditional hamburger and bread crumb dressing.

It is, especially when you're trying to keep a toddler well-fed. Take the GF stuffing as an opportunity to be grateful that you don't have to spend the time and energy on creations like that every single day!
