Anything exciting to do with leftover evaporated milk?

I made pumpkin pie and have leftover evaporated milk. Is there anything exciting I can do with it?

You can use it in place of heavy cream in recipes to lighten them up a bit.

I make a great ham and turkey casserole. 1 cup ham, 2 cups turkey, 1/2 cup sliced mushrooms sautéed in butter, 1 can water chestnuts, flour and butter to make a roux and add evaporated milk. Mix in 1/2 cup white wine and the rest of the ingredients. Pour in a cassarole dish, top with buttered bread crumbs and grated Swiss cheese. Cook @ 350 for 1/2 hour until bread crumbs brown and cheese is melted. Yum-me

Use it in place of regular milk for the cheese sauce when you make mac-n-cheese - makes it really really rich and creamy. Yum. Better than Parkway. Almost.
