If I cook scalloped potatoes in the slow cooker on Thursday will the cream curdle?

see if you can get your hands on America's Test Kitchen Slow Cooker Revolution. They address this or a similar problem.

I think the solution was using canned (not powdered) evaporated milk.

Could also try making them ahead and reheating while the turkey rests.

I think I will do this- I'm a novice Turkey Day preparer - how long is normal for the turkey to rest?

Turkey should rest 30-60 minutes depending on size. I plan to use this time to stick everything else in the oven to bake.
