| What is your favorite orzo recipe? I usually make a Greek pasta salad with it but am looking for something more appropriate to the season. Would love main dish options although would try side dishes as well. |

I do a variation of this recipe for a main course:
http://healthy-delicious.com/2010/09/baked-orzo-with-lamb/ However, I do a fair amount of substitutions/variations. Sometimes I use ground chicken instead of lamb, and I increase the meat and decrease the orzo a bit so it is a heartier main course. I also add a lot more tomato paste than here and I ramp up the spices a bit too. I also use 14.5 oz of canned tomatoes instead of fresh, which means you don't have to do the step where you remove the meat from the pan, you can just add the tomatoes. I also serve the asiago cheese on the side for people to add and I don't bother with the last step of baking it. |

This recipe was adapted from Martha Stewart's Everyday Food and we enjoy it a lot. Just be careful about the amount of lemon zest. The last time I made it, I went overboard and the lemon was overpowering (I added about double what it called for because I zested too much lemon and just decided to toss it all in):
