All these go great with ham including mashed potatoes and spinach and burgundy mushrooms. Keep as is.

Scalloped potatoes are soooo popular BUT would be too rich aka fatty with ham. Mashed is much better.
Everything is fine.
As for the mushrooms. Make them and either serve and enjoy or hold and serve another night to your nuclear family with some beef.

All of those work with ham.
