black beans

What can I do with black beans besides putting them in buritto/ wraps with chicken, cheese and salsa. Give me you ideas for meals. Thanks!

One thing I like to do with black beans is to slice a brown some nice spicy sausage (like Aidells or whatever you like), saute onions, peppers and then mix with black beans. Serve over rice and it's a jazzed up beans and rice dish and very easy to throw together.

I put them with eggs.

You can use pasta if you don't like or have red quinoa. Just double the dressing.

Ingredients:
1 cup
2 cups water
1 cup black beans
1 ear corn (grilled and kernels cut from cob)
1/2 red pepper (sliced)
1 jalapeno pepper (sliced)
1 green onion (sliced)
1/4 cup cilantro (chopped)
1 tablespoon oil
1 lime (juice)
1 chipotle in adobo sauce (chopped)
1 teaspoon cumin
salt and pepper to taste

Directions:
1. Simmer the quinoa in the water until the water is absorbed, about 20 minutes.
2. Mix the quinoa, black beans, corn, red pepper, jalapeno, green onion, and cilantro in a large bowl.
3. Mix the oil, lime juice, chipotle in adobo sauce, cumin, salt and pepper in a small bowl.
4. Toss the salad in the dressing.

I essentially ate this tonight, minus the sausage. Black beans (simmered with cumin and chili powder) + green chilies and sautéed green peppers and onions. Delicious with corn tortillas!

Fresh corn -saute. Add bell peppers & onions some garlic,cumin and beans. Half cherry tomatoes, dice avocado. Mix together.

I eat on top of lettuce, on a tortilla or with chips.

I often add them to an egg white omelet with salsa. I also eat a bowl of them with salsa and other toppings, like corn, cheese, sour cream. I make my own black beans though so they are tasty on their own - will post the recipe later.

Mix drained beans with a cup of cooked rice, a lightly beaten egg, cilantro and scallions, bread crumbs, salt, pepper, form into patties, cook in small amount of oil in skillet- bean burgers!

My favorite chili recipe is as follows: saute any green peppers, hot peppers, and/or onions I have on hand. Add a can of black beans and a can of diced tomatoes. Add chili powder, cayenne, cumin to taste. Simmer at least until warm, and longer if I can hold out. Eat over rice or wrapped in corn tortillas -- whatever's on hand. If I liked eggs, this would be great with eggs, too. Even better the next day.

I've served this to company (ILs) before, and used as a topping for a mashed potato bar at a baby shower (expecting mom was so sick, she was basically eating only potatoes).
