| Do you have some cheese? Stuff the chicken with cheese and cover in panko or breadcrumbs and then bake. Then sauté onion with some garlic, steam broccoli and toss with rice or pasta and a bit of some nice dressing? |
| Chicken and broccoli pasta. Brine chicken, season with salt and pepper, cook on stove, cut, set aside. In a small sauce pan, melt a tablespoon of butter and a tablespoon of olive oil. When hot, add chopped garlic, salt and lemon peel. Squeez in some lemon juice and set aside. Boil water, throw chopped broccoli in for three minutes, remove with slotted spoon and put in big bowl. Thrw pasta in water and cook until done. Drain, put in bowl with broccoli and toss with chicken and sauce. |

| Saute some garlic in olive oil. Cut up chicken, sprinkle with salt and pepper, and cook in wok or large skillet. After it's almost cooked through add the broccoli, garlic, olive oil. Cook just 3 or so minutes until broccoli is al dente. Mix with cooked pasta. Serve. |

Do not brine boneless chicken breasts (or any meat, really) purchased from the store. They're already injected with water/saline. Brining is at best no help, and at worst counterproductive. |
Better advice - don't buy any meat that has been injected with water/saline. |
