Can you elaborate on what you define as "healthy"? I have a great recipe, but don't want to type out everything if it won't work for you.

Op here. By healthy I mean wheat flour, less oils/ butters, not so much sugar. Would love that recipe!

Chocolate-Coffee Zucchini Bread
1 c grated zucchini - wrap in paper towel to drain 1/2 c yogurt 3/4 c sugar 2 eggs 2 t vanilla extract 4 T cocoa 1 t instant coffee powder 1/2 t salt 1/2 t baking soda 1 1/2 c flour (white wheat works here) (1/2 c semisweet mini chips - I leave these out) (1/2 c chopped walnuts, optional) 350, 55-60 minutes You can try leaving out the cocoa and coffee powder. If yogurt isn't a good choice for you, applesauce works in lieu of oil/butter. Get the little lunchpack tubs for convenience. Yogurt and applesauce have crowded out oil and butter in almost all my baking. Pie crusts, butter cookies, and shortbread are hardest, but you can use nonfat Greek yogurt for some of the butter even there. And the White Wheat flour (King Arthur, at Whole Foods and sometimes at Giant) is a healthy flour that isn't leaden like standard whole wheat. |

with some modifications: - only use 1c sugar (or less) - up the veggies to 2+ cups each (or do all zucchini) - use 1c whole wheat flour and 1c regular - i usually add 1/2 cup flax seeds too I make this regularly with the modifications suggested above and get rave reviews. I also add raisins (not sure if that's in the recipe or not). You could substitute apple sauce or yogurt for the oil, but I haven't tried it. |
You can try modifying some of the ingredients to suit your tastes/needs. Keep in mind this makes 2 loaves... 3 cups flour 1Tbs cinnamon 1tsp salt 1 tsp baking soda 3 eggs beaten (I used the flax substitute and it worked fine) 1 C sugar 1 C brown sugar 1 C oil ( I've done half olive oil, half natural applesauce) 1 Tbs vanilla 2 C grated zucchini Combine dry ingredients in a bowl. In another bowl thoroughly beat eggs, sugar, brown sugar, oil, and vanilla. Stir in dry ingredients and then the grated zucchini. Pour into 2 greased/floured (Pam baking spray) 4.5 x 8.5 pans. Bake at 325 for 60-70 min. I've also made them into muffins. DC loves them! |
