[/quote] You can try modifying some of the ingredients to suit your tastes/needs. Keep in mind this makes 2 loaves... 3 cups flour 1Tbs cinnamon 1tsp salt 1 tsp baking soda 3 eggs beaten (I used the flax substitute and it worked fine) 1 C sugar 1 C brown sugar 1 C oil ( I've done half olive oil, half natural applesauce) 1 Tbs vanilla 2 C grated zucchini Combine dry ingredients in a bowl. In another bowl thoroughly beat eggs, sugar, brown sugar, oil, and vanilla. Stir in dry ingredients and then the grated zucchini. Pour into 2 greased/floured (Pam baking spray) 4.5 x 8.5 pans. Bake at 325 for 60-70 min. I've also made them into muffins. DC loves them![/quote]
