Making a dairy free cake for DD's first birthday

DD is turning 1 next month! We think she is allergic to dairy (trying yogurt last month was a BAD idea) so I'm going to make a small dairy free cake for her. Any tried and true recipes? We think she tolerates eggs but honestly, we haven't tried them yet directly (I'm still nursing and she doesn't seem to have an issue when I have eggs). The recipe just needs to be for a small cake as we are going to get a regular sheet cake from Costco for all the guests. Thanks!

Try a wacky cake? They have no dairy and no eggs--but sorry, I haven't made one in years and don't have a go-to recipe.

Easiest allergen free cake ever. And tastes great too. Read the ingredients but I think that the frosting would work in your situation as well.

Chocolate cake
3 cups flour
2 cups sugar
6 tablespoons cocoa
2 teaspoons baking soda
1 teaspoon salt
2 cups water
3/4 cup vegetable oil
2 tablespoons vinegar
2 teaspoons vanilla

Preheat oven to 350 degrees. Mix dry ingredients first. Once the mixture is even, mix in wet ingredients. Continue mixing until you obtain an even batter (no lumps). Pour into a greased cake pan and bake for approximately 40 minutes (or 20 minutes for 20 cupcakes, 30 minutes for 2 rounds).

Frosting
1 cup Crisco
2 lbs powdered/confectioner's sugar
1/2 cup water
1/8 tsp. salt
1/2 tsp. vanilla

Whip till fluffy using a heavy duty mixer.

Op what happened with the yogurt? We are at exactly the same point with DC's milk allergy and about to experiment with yogurt and baked goods too.

BTW, Sticky Fingers does vegan in case you change your mind about baking. Their cakes/cupcakes are yummy.

If you want to use a mix, almost all the Duncan Hines cakes are dairy-free and they just require eggs, oil and water.

Op here. Well we first realized DD was having issues with me having dairy last summer. She had very green, mucusy stools every time I had dairy. I never saw blood but the dr did a stool test and said there was a trace amount of blood. So I've been dairy free since then. In February I started adding dairy back into my diet - first baked goods, then yogurt, then milk. DD seemed to tolerate all. So we tried yogurt for her. Her stools were very green again, mucusy and smelled horrible. Plus her stomach was audibly churning and she was uncomfortable. It was very hard on her. Oh and we did 3 days as per our dr.

So now dr says no dairy until she's 15 mos. I'm leaning towards continuing to BF since it's better for her. Good luck with introducing dairy to your DD!

Also there's a box mix from Cherrybrook Farms. They are completely dairy, soy, treenut, egg, and peanut free (including their facilities!). They also have a frosting mix that we made with coconut oil instead of butter. It was delicious! ...but you definitely need to like the taste of coconut, which we do

Btw, try the coconut yogurt by So Delicious. It lives up to its name!

Alton brown's chocolate cake with avocado - its vegan and awesome! I say that as a non vegan which IMO is important because vegans often forget how good the real thing tastes (I don't care where/who is from, vegan cheesecake cannot be as good as the real thing). This is pp with the dairy questions. Good to know, as i wasnt sure what to look for hen we start to reintroduce dairy. Kudos to you for going dairy free for so long! Its been tough for me.

OP, why give your baby a cake for the first birthday? For both of my kids, we just gave them some special fruit with a candle. One is much too young for sugary treats, imo.

OP here. I'm not opposed to something healthier but her dad won't hear of not doing a cake. He is a slave to tradition. But I'm going to bake her a cake so I'm going to try to make it healthier!

How about a banana bread muffin or a carrot cake muffin? Carrot cakes (without cream cheese frosting) are usually dairy-free. I just made some "morning glory" muffins - doubled the recipe but cut the sugar down to 1/2 cup (and used coconut sugar instead of whatever was called for.) My toddler loves them!
