I have a lot of cooked quinoa, and I know not what to do with it.

Why did I make this much? No idea. It seemed like a good idea at the time. So far I've made:

quinoa pilaf
quinoa and beans
sesame quinoa with kale and tofu (aka athlete gruel)
quinoa porridge (like oatmeal with maple syrup and raisins)

So...anbody have any other ideas to share?

Are you a vegetarian? If not maybe mix some with salmon to make patties in a skillet or mix with ground meat for meatloaf in the oven.

OP - since you must be a quinoa expert i'd love to hear how you liked the things you've made thus far. I've made big batches of brown rice and various beans, but not quinoa. Seems like a decent idea though, a healthy go-to food to have on hand....as long as you can find recipes that make it feel different each go round.

especially interesed in the porridge....was it good?

I like to make a Greek style cold quinoa salad with diced cucumbers, tomatoes, red onion, green pepper, olives, olive oil, red wine vinegar, s&p, dried oregano, minced garlic--all mixed in with the quinoa, also sometimes add crumbled feta. Usually eat in a pita half or tortilla spread with hummus for lunch.

I like to throw quinoa into a green salad (mesclun mix or baby lettuces) for the protein. My favorite of late is with Annie's Naturals parmesan and artichoke salad dressing. I also like quinoa on a green salad with goat cheese, some kind of fruit (chopped strawberries or grapes or dried cranberries) and a light or fruity vinaigrette, like Brianna's blackberry vinaigrette. You could add nuts, too, although we have to be a nut-free house.

I make the Barefoot Contessa's Tabbouleh recipe with quinoa instead of bulgur and its always great:

One caveat - I think this recipe calls for too much salt (and I generally use a lot of salt, so that is unusual for me to say), so omit the 2 tsp. salt in the second step of the recipe.

Chickpeas, quinoa and avocado salad with a citrus dressing. Add cilantro and spinach to tate.

Wow. Thanks, guys! Yes, I'm a vegetarian, but if anyone asks I'll pass on the salmon patty idea.

The porridge was pretty good. I heated it up with some soymilk to make it creamy, and it was nice and breakfasty tasting. I'm no expert, as my quinoa is kind of sticky/lumpy and not fluffy, but nothing I've made with it so far has been inedible.

For pancakes, would you just put hte quinoa in the regular er as an added bonus, or would you use it as the base, kind of like a latke? (I'm a Jewish vegetarian

Add it to black beans and chopped onion and pepper as a stuffing for baked acorn squash (with cilantro and cheddar) or stuffed bell peppers.
