| I'm trying to find healthy QUICK foods to expand DD's palette. She just turned 1 and eats the bland yogurt-cheese-Cherrios diet. I'm looking for ANY suggestions but especially interested in veggie options, since she refuses them in the traditional way. I shop at Trader Joe's and While Foods mainly but will go anywhere for tried and true suggestions. TIA!!! |
| Polenta + cheese + veggies. Nuke and blend. |

My DC loves this meal: chop up and boil a sweet potato, add a little butter if you like, then throw in some chopped frozen spinach until that's cooked. He calls it his "special soup" and somtimes I add a dollop of plain yogurt to the bowl. That combination looks really unappetizing to me- but hey, he loves it and it's good for him.
Hummus can be quick and nutritious, if you find one that's not too salty. |
OMG. He eats that? Good for you. Can't imagine what else you are feeding that kids so that this is considered "special." But seriously, that's great. Clearly, I'm a failure. |

I puree cooked broccoli and spinach (I use frozen to minimize prep) and freeze them in ice cube trays. Then I use this sauce on whole grain pasta or rice. Have also done this with sweet potato, and carrot with rutabega.
I do the same with frozen mango chunks and mix into yogurt or serve alone. Recently DC has come around to roasted sweet potato chunks. Cut into 1" pieces, coat well with olive oil and roast for ~40 minutes. It really brings out the sweetness and reduces striginess that can sometimes occur when you roast a whole sweet potato. I also had to let go of variety. I've found a few healthy things that DC will reliably eat and I offer him those over and over again. I introduce new foods every couple of days, but as an addition, not the focus of the meal. |
| Edamame, beans (my DD loved how they pop in your mouth when you break the skin), pasta and sauce and peas is a staple in my house. we also do a lot of cheesy pockets, which are whole wheat pitas and melted cheese, plus anything I want DD to try, like kale, arugula, spinach, cauliflowe. Amazing how delivery is everything, DD knows there is always a surprise in a cheesy melt! |
I am such a shitty cook.

I sometimes make meatloaf and load it with at leat 50% veggies... and yummy spices and my DD loves it!
I need more ideas too though for veggie delivery so some of these are helpful. Come on people, don't hold out on us! Share more! |
Not the one who posted this, but good lord you are nasty! A littel boy calling something his "special soup" is adorable, and that is one healthy "soup" to boot. |
That's not nasty. That's a compliment. Clearly, she's not feeding him crap if he thinks spinach and a sweet potato are special. Touchy! |
| Tofu cut up and boiled with a bouillon cube. |

You can make a little activity out of making a smoothy with your little baby...she can help throw things in the blender...bananas, strawberries, etc. and you can use your yogurt.
For veggies...you can do the same thing and have her help you throw things in the blender to make a little veggie dip for some carrots and celery dips. You can use the yogurt for that too. I think babies like the smooth texture that blender foods make. |
| How do you make a cheesy melt? That sounds like a good idea. |

My son loves lima beans! Frozen section at Whole Foods. Organic. It was hard to figure out what to give him when he transitioned from cheerios on to other things, but he liked things he could pick up, but also knew he could squish, so beans are a really good option. Loves hummus too. I'd give lima beans, black beans, and peas a try.
Anything in a quesedilla works too. A little bit of work but lots of kiddos seem to like it! |
| are there any ready-made things in the frozen section of whole foods or Trader's that are veggie based that you're kids will eat? |
