| Hi, I had extra meringue so I made a meringue pie. I need something to put on top to turn it into a dessert - another layer but I don't want any thing too sweet as the meringue is so sweet. Any ideas? |
| do a classic pavlova: add any sinful creamy filling: double cream, creme fraiche, whipped cream, sour cream or any combo thereof, then top with fresh berries or passion fruit. mmmm. And, not too sweet - since the meringue is super sweet, you don't need to add any sugar to the cream. When I have some handy, I fold some lemon curd into the cream ... You could also soak the berries in some liquere to make it more grown up (in which case, you might get away with frozen berries). |

Angel Pie...basically a sweetened whipped cream with chocolate shavings folded in.
4 large egg whites, room temperature 2/3cup plus 2 tablespoons granulated sugar 1/3cup confectioners' sugar 1cup heavy cream, chilled 1/2teaspoon vanilla extract 2ounces finely chopped bittersweet chocolate INSTRUCTIONS 1. Adjust oven rack to middle position and heat oven to 350 degrees. Grease 9-inch pie plate. With electric mixer on medium-high speed, whip egg whites until frothy. With mixer running, slowly add 2/3 cup granulated sugar and beat until soft peaks form. Fold confectioners’ sugar into whipped egg white mixture until just incorporated. Transfer to prepared pie plate and bake until golden, 35 to 40 minutes. Refrigerate until cool. (Pie shell will sink slightly in center.) 2. In clean bowl, whip cream, vanilla, and remaining granulated sugar to stiff peaks. Fold chocolate into whipped cream. Spoon whipped cream mixture over chilled pie shell. Serve. |
I actually think meringue crust goes really nicely with a chocolate pie that's not too sweet. like a dark chocolate pudding pie or something.
