How many meals a week from a slow cooker?

I am looking for a way to save time cooking and I thought I might buy a slow cooker and see how it works. (By the way, I have a pressure cooker that I rarely use -- can that function in a similar way?)

Anyway, I'm planning on buying a cookbook to go along with it, and I see it's a lot of chili/stews/soups. (I'm veg so it's a vegetarian cookbook.) Just wondering if all the slow cooker dishes are liquidy/stewy, and if that gets really boring after awhile? Can you cook meals every day in a slow cooker or is it something you alternate with cooking on the stove/oven?

I do one meal a week..and hope to have leftovers to make a second meal. I really like it..but I don't think you should expect it to cover every night of the week.

We have a large crockpot and one recipe in there feeds us easily for 2-3 meals (usually just DH and I). Buying a cookbook is almost a waste of money; there are so many websites and recipes online to find things to make.

I do meals at least twice a week, and they certainly aren't all "stew/soup"

You can roast a chicken

Make chicken and dumplings

Beef enchiladas

Desserts!

Allrecipes is my favorite go to.

...the OP is a vegetarian. I don't think she's going to be roasting a chicken anytime soon!

We're veg too and I just got out my slow cooker this week. Unfortunately, I only got to use it three times before I broke it. But I will be getting a replacement in the holiday sales. I'm thinking of doing about 2 meals a week with it. We'll see how it goes!

21:18 here.. I had a couple glasses of wine after a long week and kids in bed! Sorry about that.

Desserts! Lentils! Casseroles! (Can't speak to Tofus)

I also use mine to slow cook lots of bean-related dishes because I love beans. Black beans in some flavors can be reduced down and use for dinner with others frozen for the future.

I can't speak to many fresh veggies other than some Southern adaptations of ratatouille.

Chili in the slow cooker comes to mind.

I would investigate different world cuisines. When I took a trip to Morocco, there were tons of stewed vegetarian dishes, mostly cooked via pressure cookers instead of the more traditional tagines to speed cooking time (but still called tagines). I bet Ethiopian dishes would work well for pressure cookers or slow cookers. Maybe peruse your local library's selection on cookbooks and experiment.
