What can I put into muffins to make healthy?

Alhtough I occasionally shop at Whole Foods I never seem to have caught on to all the organic powders and seed purees that I know are there (somewhere).

What do you put into a muffin to make it extra healthy that kids will actually eat? Flax seed? I like to do zucchini bread so may start with that as a base but don't know what else to add. They refuse to eat blueberries or anything simple like that and so it has to kind of just blend in, stealth-style.

substitute the oil for applesauce (regular unsweetened)

egg whites for egg

make fresh banana muffins (good way to get rid of over ripe bananas too) and sprinkle with almonds, pecans, or other nut (assuming no nut allergies)

Depending on your goal (veggies? fiber? protein?) you could also sneak in pureed fruit (carrots or applesauce like pp said, or sweet potatoes, pears, bananas), whole wheat flour, ground flax seed, raisins/dried cherries/cranberries, nuts. Just don't try too many tweaks at once or they'll get suspicious

King Arthur White Whole Wheat flour is a great way to add more whole grains--it is made from a different variety of wheat and so doesn't have that strong whole wheat taste. Start by subbing it for 1/2 of the regular flour. I even use it in chocolate chip cookies and don't notice the difference.

Oatmeal is something else you can use without notice.

my son refuses to eat blueberries and most fruit. i added them to pancakes this weekend and he refused to eat them and wanted regular pancakes. i offer fruit all the time...have no idea what to do. he doesn't seem to like the texture.

Try making muffins with quinoa! My DDs love them. I got the idea from Martha Stewart.

Are you kidding? Have you ever had a toddler? They refuse things all the time. Just because blueberries are perfect to you right now does not make them appetizing to a toddler who just plain old won't eat them.

Canned pumpkin is super nutritious -- we make whole grain pancakes from a mix and fold in milled flax seed and pumpkin. They're delicious -- why not muffins?

Cinnamon is also a power food (or spice) and tastes great with pumpkin.
