have your tried freezing fruit? I love putting fresh blueberries (especially now that they are so plump and ripe) in the freezer and then sucking on them.

I use whole wheat flour and substitute 1 tablespoon of wheat germ for flour in each cup of flour I use. I add ground up flax seed as well. You can use banana instead of egg (although egg is healthy). Honey instead of sugar. I also use blackstrap molassas as a partial substitute for honey in some recipes. It's loaded with iron. Applesauce instead of oil.
You'll definitely notice the difference in taste, but my son doesn't know any better and actually won't eat a standard blueberry muffin from the store or bakery. He just doesn't like it. |

molasses is a good idea. I've been using agave syrup, maple syrup or honey as sweeteners, and at reduced amounts.
Fresh cranberries - I threw some bags in the freezer last winter and have used those. Buckwheat flour, although I'm wouldn't do 100% at first until they get used to the taste. |
