vegetarian casserole recipes

Anyone have some good, go to vegetarian casserole recipes that don't involve a pound of cheese or smothering vegetables to the point that you can't tell it's vegetables anymore? Cheese is fine in moderation, but when I look online I find a lot of casseroles that are so smothered in fat and carbs that of course everyone loves it, but it's not healthy. I'm really trying to get more one pot dishes in my repertoire. Thanks!

I'll share if you share some of yours! This is great for kids. Add whatever you want in terms of herbs to jazz it up.

Lentil Rice Casserole

3/4 c. lentils, uncooked
1/2 c. brown rice (or white), uncooked
2 1/4 c. broth
some garlic, chopped onion, grated carrot
1/2 t. basil
1/4 t. oregano
1/4 t. thyme

Mix all ingredients and place in covered casserole dish. Bake 1.5 hours in 300 degree oven. You can uncover and put some grated cheese on top 20 minutes before taking it out.

Thanks! I don't have ANY casserole dishes, but a great easy dish that everyone who has ever had it loves is sweet potato "enchiladas"

6-8 Tortillas
1 can sweet potato puree (Trader Joe's has it at certain times of the year) or butternut squash puree (potato is better) OR leftover mashed sweet potatoes
1 extra large can of black beans, rinsed and drained
mexican blend cheese (optional)
1/2 onion, chopped
1/2 C. chopped pepper of your choice (can go sweet or bell, less if it's a hot pepper)
1 T. garlic, minced
2 T. cumin
2 T. salt

*You will need a casserole dish that is wide enough for the tortillas to go across horizontally but short enough to keep the enchiladas tight. 9x13 is usually too big, so closer to a 9x9 or 2qt. pyrex dish.

Saute in olive oil, the peppers, onion and garlic until softened but not brown. Add the black beans, cumin and salt. If the mixture is dry (usually is) add about 1/4 C. of water and cook until beans are heated through and water evaporates.

Take your tortillas and spoon a generous heap of the sweet potato puree in the middle, then spoon the black bean mixture on top, roll up the tortilla and place in casserole dish. Do this with all the tortillas until the black bean mixture is used up. Don't put too much of the black bean mix in the tortilla, usually two big spoonfuls is good. I can make anywhere from 4 fat enchiladas to 8 skinny ones depending on the size of my crowd. I assume each person will have 1 1/2-2.

Once all of the enchiladas are in the pan - spread any left over sweet potato on top and sprinkle with cheese if desired. If you don't have left over potato, that's fine, just cheese works or plain is also fine.

Bake in the oven at 350 for about 20 min. These will be super hot when they come out so let them sit before serving.

When I was a vegetarian (and I was one for 20 years), this was my go-to lasagna recipe:

Black bean lasagna might not be to everyone's taste, but I loved it. If you look at the reviews on that page, mine is the second one down (from 27 February 2007), so you can see I didn't follow it exactly. When I made it with a can of refried black beans, it was just too bean-y.

Ah, I just re-read your post - I don't know why I read casserole = lasagna... been a long week. Anyway, it's a good one if you want to try. It's a bit of work but freezes beautifully so it's worth the effort. And if you use the no-cook noodles, it's easier.

I tried the sweet potato enchilada recipe earlier this week. I think the OP recipe meant tsp spices... at least tha'ts what I did and it was about right.

I used about 4-5 sweet potatoes (baked in the microwave) and mashed. I added a little more water and juice of 1 lime to thin it out.

All in all, pretty godd, but I think needs a sauce or something. Maybe if you were using sweet potato puree from a can it would be smoother.

Gonna try the lentil rice casserole tonight.

I'm curious about the lentil rice casserole. Do you serve it with anything? doesn't seem like a main dish but maybe I'm wrong.

I just found this recipe over the wknd (have not made it yet)

I did make this:

But here are the changes I made:
-used less cheese, less bread crumbs
-added peppers, zucchini, carrots
-made it a meatloaf instead of a croquette

Kids loved it!

OP here, I use tablespoons for the spices. I like my garlic and cumin and you need a good dose of salt for that amount of beans. I could see wanting a sauce, but I like them crispy and often pick them up to eat.

not a casserole per say but I made ratatouille Monday and it was fantastic
