What do you maker for dinner when it's just you?

When DH travels and I don't want what I'm serving the kids (I don't like meat), what can I eat that is quick and healthy? My stand by is lean cuisine rice and beans, but I'm a bit sick of that. Thanks!

Ok, honestly...cereal. Different kinds but mostly the crap ones. Once a year or so I eat cocoa puffs.

Yeah, that's the problem. That and nachos. I eat those because I don't want to cook. Not a good scene!

I throw a salmon burger in the toaster oven (on the oven setting) and either use a whole wheat wrap, bun, or sandwich bread -

Cereal
Ravioli w/ jar sauce
Hummas and chips/carrots

Mostly sandwoches with ham or cheese, sometimes I treat myself to smoked salmon or Eel, with tea. Sometimes simple pasta.

My husband hates the smell of fish and I love salmon, so I keep salmon filets in the freezer. I grill them up and have that with whatever veggies I'm giving the kids.

Or I just have a bowl of cereal or PB&J.

Egg sandwich or scrambled eggs and toast.
Pasta (usually cheese tortellini) with peas, olive oil, and grated parmesan.
