me too - although my favorite is DeCecco fusilli for the pasta.

We eat pretty healthfully so I don't feel too badly about occasional splurges when he's out of town. DH hates pizza, so I'll usually buy an individual-size pizza (Amy's, CPK or something) from the freezer section and bake it. Yum.

Otherwise, usually a quick salad, or pasta with jarred sauce.
Once or twice I also did crackers with peanut butter and jelly - a favorite snack when I was a kid that makes an easy dinner too. Very hard to do a wine pairing, though.

I try to eat what I'm feeding the kiddo, unless I had a big lunch and I'm just not hungry.

Kid and mom-friendly, quick dinners (b/c when you are the only parent in the house, there just isn't as much time to cook and clean and still get everyone to bed on time):

* omelet
* grilled cheese with soup and/or salad
* ravioli with broccoli and shrimp
* veggie burger
* roasted cherry tomatoes & shrimp
* stir fry (I do veggies with chicken or shrimp, but you could do just veggies)
* sloppy joes
* pulled chicken
* quesadillas

If your kids will eat them, bean & cheese enchilada pie.

Usually an omelet with sauteed spinach, mushrooms if we have them, and cheese.

Or if there's leftover rice or couscous or small pasta I'll put sauteed veggies over that and then a sort of runny fried egg and some grated parmesan and salt and black pepper.

Me to, and most of the time it's spinach and feta omelets or something like that. DD now thinks it's a special treat to eat eggs for dinner

Usually an omelet or veggie burger, sometimes canned baked beans (my DH doesn't like) or crackers and (good, usually French) cheese - that works for the wine pairing!

Stuff I'm too embarassed to eat in front of DH, like ramen and vienna sausages with white rice. Sometimes I buy a rotisserie chicken and eat that for the week when DH travels. I eat it chopped over a salad, or rolled into a tortilla, etc.

I'm in the same boat as PP--"Stuff I'm too embarassed to eat in front of DH".

My go-to is Kraft Mac and Cheese. Horrible, I know, but such a good throwback to childhood.

My normal go-to is a huge bowl of buttered popcorn but you asked for healthy .. sprinkle some cajun or other "spicy" blend on shrimp and quickly cook in hot skillet. Add to a big bowl of baby spinach and top with red onion slices, feta and some baby tomatoes. Yum! If I'm having total carb cravings I'll cook some orzo and toss that with some wilted spinach, cooked shrimp, feta (can you tell I love it?), tomatoes and some olives. Yum yum.
