Meatless entrees that meat-loving DH will like/enjoy

Toddler friendly would be nice too, although our 2.5 is not a picky eater. I am looking to try and do one or two meatless dinners a week to cut down on grocery costs but DH is useD to having chicken/fish/steak etc at each meal. Any good ideas/recipes that work at your house? Thanks!

Sometimes it's very simple to sub the Morningstar Burger crumbles in for ground beef. 1 package = 1 lb of ground beef

I personally do not like the Morningstar steak or chicken strip things. They have a funny taste

Gimme Lean Sausage from Lightlife (usually in produce section in the refrigerated section) tastes so darn close to sausage you probably won't be able to tell the difference. It's a lot stickier and can be hard to get it to "crumble" like sausage when you cook it, but it really has a good taste.

For Italian type sausage I prefer the Boca brand. I brown them in a pan on the stove.

The Quorn brand has really good tasting "chicken" products. They have naked chicken breast things, nuggets, patties, and they also have their own version of crumbles. Target generally has the best price for them.

Are you looking for a specific type of recipe (Italian, Mexican, soups, casseroles,...?) I have lots to share

We just tried these black bean and corn quesadillas and they were delish -

Black bean enchiladas

I can't remember the exact portions -- I ballpark it -- but if it sounds good, I'll dig up my recipe and post it.

1 can black beans, rinsed well
half an onion, diced
1 green pepper (or whatever pepper you like), diced
3 or 4 cloves of garlic, minced
olive oil

whole wheat tortillas
1 bag of shredded cheese (we use mild cheddar)
mild salsa (or whatever the kid will like)


In a large sauce pan or dutch oven, saute the oil, onions, peppers, and garlic until onions are clear. Add black beans. Heat through.

Place two spoonfulls of this mixture in the middle of a whole wheat tortilla. Add a tablespoon or so of salsa. Sprinkle inside with cheese. Wrap and place in 9 by 12 baking dish. Repeat until you have about 10 tortillas wrapped up like that. Sprinkle the outside with cheese. Bake 20 minutes at 350. Serve with remaining salsa, sour cream, and/or guac.

I make my son's enchilada with extra cheese inside and this makes him gobble up the black beans.

Scrambled eggs with sun-dried tomatoes and cheese (or meatless filling of choice).
Pasta with pesto or tomato sauce.
Roasted sweet potato with soup or salad.
Black beans with rice, bulgur, or wheatberries - saute 2 tbsp cumin, add 1 can black beans (rinsed) with 1 can diced tomatoes, add 1-2 chopped chipotles en adobo (from can). Add cilantro or lime if desired. Mix with the grain and serve with salsa or an avocado mashed with lime (quick guac). In law school this was my go-to meal - 20 minutes for the grain to cook (40 if wheatberries), 10 minutes for the beans. These proportions give you 3 good-sized servings or 4 servings if you add a salad.

I'm a big fan of soups - black bean, potato, zucchini, tomato, mushroom, whatever - with salad, bread, or a vegetable. Very filling and quick because you can make a giant pot and either eat it through the week, or freeze large portions.

Black bean chili is always a winner with my husband - it's very filling and spicy, so he doesn't miss the meat.

I agree, esp. adding it to spaghetti sauce is an easy transition...

Spaghetti bolognese. I use the Smart Ground original that you can get in the cold section of Whole Foods (not frozen). I've fooled many guests with that ... !
