What to do with leftover coconut milk?

I made something last night that only used 1/2 a can of light coconut milk. Any ideas what to do with the rest?

Also, if you go to Asian groceries at all, they sell little cans of coconut milk that don't leave you with ridiculous leftover amounts.

I freeze the rest in tiny portion-size rubbermaid containers.

Definitely use to make rice (I usually use half water half coconut milk) - it enhances the flavor and is so yummy.

Yes! The seafood market on Connecticut Ave in Chevy Chase DC sells 5.5 oz cans. I can't find them anywhere else so I always stock up.

Cook some greens like spinach or swiss chard in it. Add some garlic and either red pepper flakes or fresh chilis. Yum.

I love this Thai Chicken Salad from Cooking Light. It uses light coconut milk to make the dressing. YUM!

In what? I will stick to sweetened condensed in my Vietnamese coffee, but I'm intrigued to know what I can sub coconut milk into instead? Brownies? Tres leches?
