What to do with leftover coconut milk?

In what? I will stick to sweetened condensed in my Vietnamese coffee, but I'm intrigued to know what I can sub coconut milk into instead? Brownies? Tres leches?

OP here - thanks for all the great ideas. The leftovers were from a rice & bean recipe and I agree it is a great addition to rice. Love the greens idea!

I pour coconut milk over frozen berries as a dessert. Delish!

Pour over chocolate ice cream, mmmm now I want some! Rice pudding sounds good too. Paula Dean made a bread pudding with it on her show once, looked good. Can you tell I am pregnant!

Also good for french toast - add some sliced mango on top.
