Is it too soon to make a move? Should I even make a ( subtle) move?

SO I love the idea of Mexican food and hiking, but how do you ask a guy out? I've never asked a guy on a date before?

Is it as simple as "I'm going hiking this weekend do you want to join me? And maybe grab some Mexican after?"
