Make a weekday ‘strata’ like breakfast - use this lemon blueberry ricotta bread pudding recipe as a starting point. I’ve made this using just mostly the heels of soft potato bread and even w/that marginal quality it’s delish and an easy treat you can make in middle of the week that’s a great treat for all: just sub your sandwich bread for the artisanal they ask for. I use frozen blueberries and often double amount. I also don’t necessarily delay cooking as they say to do.

| It stays fine in the fridge for longer than you think. At least it does in our house. Then make toast with eggs. Or grilled cheese. |
