Too much sandwich bread

Make a weekday ‘strata’ like breakfast - use this lemon blueberry ricotta bread pudding recipe as a starting point. I’ve made this using just mostly the heels of soft potato bread and even w/that marginal quality it’s delish and an easy treat you can make in middle of the week that’s a great treat for all: just sub your sandwich bread for the artisanal they ask for. I use frozen blueberries and often double amount. I also don’t necessarily delay cooking as they say to do.

It stays fine in the fridge for longer than you think. At least it does in our house. Then make toast with eggs. Or grilled cheese.
