Agree. They are so tasty.

If you want meat a slice of microwave bacon. Seriously, it takes five minutes and really good. This is my breakfast most days.

I can and have made them before but I just want to not cook a meal this time. I’m out of green Chile

Which one do you get? There’s so many options and with different sauces.

My favorites are the BB Special (egg, cheese, potato, red chile) and the bacon, egg, cheese, potato, and red chile.

I think Anita’s is gross. I live a few blocks from one and have given up trying to find a breakfast burrito there that doesn’t have a weird egg texture.

I make my own now!

-Brown 1# turkey sausage (when cooked I chop the sausage finer so there are uniform pieces)
-Scramble a dozen eggs
-Combine cooked sausage, scrambled eggs and shredded cheese (I typically use a combo of jalapeño jack and cheddar)
-Lay out the tortillas (about 16) and distribute egg mixture on each one.
-Wrap individually in seran and place 8n freezer bag.

I prefer to remove from freezer the night before, but can thaw in microwave too. Reheat in microwave. Can add vegetables, hot sauce etc.

You have to add potatoes, onion, green chili if you have it.

Will the chili freeze well? I have my doubts.

I am the burrito recipe poster. I have thrown in roasted vegetables without any problems.

I make them too. I just made them last night for dinner

Cook up chorizo in a pan with a little veg oil, crumbling it as it cooks.

Remove. Leave oil in pan.

Dice 1/2 onion. Add it to the pan, cook in oil for 10 minutes. Adding more veg oil, if needed. Remove cooked onion. Wash pan.

Scramble 6 eggs with a couple pinches of salt.
Put nice tab of butter in clean pan. Cook on med-high.

When butter starts sizzling, add eggs. Add chorizo & onion. Let eggs set and then mix until cooked. (You can add cheese here if you want)

Put eggs on a plate.

Heat tortillas in a pan. I use raw Tortilla Land tortillas.

Put eggs in tortilla and add diced avocado.
Carefully fold & roll into a burrito.

6 eggs will make 4 small burritos.

I’m from the Southwest and I don’t know anyplace with decent chorizo around here. Sometimes I.bring it from home. Where are people buying it?
The Trader Joe’s soy risk is surprisingly good (I’ve tried other brands of fake chorizo and thought they were all bad).

I’m OP, also from the Southwest. I usually just resign myself to only getting breakfast burritos when I visit family and friends a few times a year but 2020 had other plans! I miss being able to get a delicious burrito from basically any gas station, restaurant or even street corner. They are never the same when I make them.

The Clifton General Store on Main St. in Clifton (Western Fairfax) was famous for their delicious breakfast burrito from the store grill. The place has gone more upscale with an adjacent pub, but they probably still offer the breakfast burrito.

BB Special is what I get too. But I add either extra potatoes or add whole beans. And I substitute Green Chile for the red (and get extra—so good!!)
When I’m there in person ( ), I get the Huevos Rancheros with Green Chile.

I don't know where in the DMV you are located, but I can get Cacique or Supremo chorizo, both beef and pork at our local Walmart (MD), which are the same brands I was buying at HEB and cooking with when we lived in TX. I use one roll of that with about 12 eggs and get a week's worth of breakfast tacos.

You juat said something that makes me think you are looking for something that doesn't exist in the DMV. Anyone who says they are out of green chile is from New Mexico. As a Mexican-American whose family is from NM, you are SOL. I am so so sorry! I haven't even found decent chilaquiles here. If you find some place, please post! I will go!

Here you go. The key is to heat up the burrito in a pan. You can put whatever you want inside.
