OP I'm sure you shopped already but here's mine! I'm on week 2 of no shopping, only freezer and forage meals.
Stir fry Korean rice cakes in a Peanut-kojujang-soy sauce, frozen edamame and corn my mom brought from a farm stand. Andouille chicken sausage and kale and bean soup, may add cabbage. Bacon and kimchee fried rice (frozen corn and whatever else) Some random frozen chicken wings and fish sticks I got from school lunch program, Cole slaw. Quinoa/chia/coconut/frozen guava pudding? Fruit (apple/pear) salad with shiso. This is a weird one I know, but week 2. Miso noodle soup, dried mushrooms, seaweed, kudzu. |

Do one week meal plans. This week:
Sunday- chili, two batches. One regular beef and one veggie based Monday- braised short ribs with mashed potatoes and steamed carrots ( hoped for leftovers but didn’t happen) Tuesday- grilled chicken sandwiches with roasted broccoli and shishito peppers Wednesday- leftover chili as nachos or chili dogs or whatever leftovers anyone wants with the chili Thursday- tomato soup with grilled cheese and salad Friday- pizza or other take out Saturday- pot luck with a few neighbors. Will take burgers to toss on their grill and some sort of side. |

Monday — tomato, fresh mozzarella, pesto and bacon on focaccia with corn on cob Tuesday—black bean and corn quesadillas (plus squash if I can find any in freezer) with baby tomatos and guac Wednesday—breakfast egg casserole with sausage Thursday—grilled salmon, buttered orzo, peas Friday and Saturday traveling |
