Should we be setting up separate work and personal Zoom accounts (like with your work email and personal email)? I wouldn't want my work contacts to see/have my personal email).

You do not need an account to use zoom. You just need to click on the link they send. If you want to make accounts, and you are worried about work people getting your personal details, then yeah, set up two accounts (or one burner account).
