Linguine. Easy to scale up and really good. Do a big simple salad and some bread on the side.

Braised pork shoulder - look for the recipe on the Dinner a love story website, super easy, serve with papperdelle pasta,
Roast butternut squash cubes with olive oil and sage, vegetarian guest can have the squash with the papperdelle pasta,

Make a simple green salad with a vinegarette dressing.

Fruit and cheese plate for dessert and chocolates

How do you make a lasagna with no diary?

Hard to do with no dairy

Plus a heck of a lot of people don’t want a heavy pasta dish.

I have a vegetarian friend who also does not eat eggs or dairy. When we have get togethers for meals at homes, she brings her own food. Tofu turkey for Thanksgiving, and potatoes with vegetarian butter.

I would do a Middle Eastern selection of homemade mezze (eggplant salad, hummus, tehina, spicy pepper salad), roast lamb, maklouba or mejudderah, roasted squash halves filled with bulgur, onions, and pine nuts for the vegetarians, maybe brussel sprouts with pomegranate molasses.

Or Italian antipasti of pickled vegetables, olive tapenade, pesto with parsley, garlic, almonds; beet gnocchi with balsamic/beet greens; roast chicken with olives and oranges; Farro with mushrooms; roast salmon with crispy capers and garlic.

Oven baked salmon is super easy. Vegetarian sides like asparagus roasted potatoes or Brussels sprouts. Plus something like lentils or a hearty pasta that could be good for the vegetarian.

I didn’t make the suggestion for the lasagna but some vegans do it with cashew cream or vegan store bought cheese.

Go on Hello Fresh and pick from their menu. They’ll ship it with everything you need. I’ve started using them and the meals are awesome. Tons of choices. Excellent quality. If I were having a dinner party I would just order and cook something off their menu.

Just hire a caterer.

That’s ridiculous. Asian cuisines don’t rely as much on dairy so you can take your hints from there. And vegetarian is not hard to accommodate. Just make a meat dish and a bunch of sides but make sure one is legume based or something else substantial so they don’t go away hungry.

This is true, but Asian dishes do require a TON of different sauces and spices which can be really overwhelming and expensive if you don't cook those dishes regularly and have things on hand.

Still way cheaper than a caterer. See this Asian salmon recipe below which is super easy. Soy sauce and ginger and garlic and sriacha sauce are not hard to procure (you can find them anywhere from Trader Joe's to Giant.)

I would just tell them to pick a restaurant and meet there.

Don’t invite me over and cater it. You need to cook a meal.
