Add a pinch of shredded cheese if you'd like. |

| Do ahead baked scrambled eggs. First, I saute a bunch of vegetables. Typically, I use a handful of spinach, some peppers, broccoli and mushrooms--basically anything leftover in your frig. Next, spray a 9 X 9 casserole dish and place the vegetable mixture. Whisk 6 or 7 eggs and put in the dish. Add some shredded cheese on top. Bake at 350 for 25 minutes. I cut off a square section each morning and reheat in microwave. |
