Definitely depends on their interests. I have now 6-yo twins and we last went when they were 4.5 (preK). We spent the first day at MK, morning at HS then afternoon/evening at MK and then a day at Epcot.
For us, Epcot features The Seas with Nemo (my kids like aquariums), Soarin and the Living with the land (they like plants and boats), the Imagination pavilion, the movies (America, France, China, Canada) and the food.
But my kids really like shows and music, so they enjoyed the Disney Junior stage show, and the Little Mermaid shows. At that point, one was tired of shows. The one that wasn't went with Mom to see the Beauty and the Beast show. The one that was, took a walk with Dad to the lagoon (fed some ducks) and then went to take photos with Buzz Lightyear and Woody and then to take a photo with Lightning McQueen and Mater. After that, we met back up, had lunch and then went for another half day at MK.
