Travel time from airport to resort via Disney Magical Express?

Our bags took 4-5 hours to come The ME took about 60 minutes and I had wanted to get in the pool after our flight but the bags took too long.

You can ask them to hold your bags until the next morning if you have what you need for the night. That way you don't have to worry about a late night knock.

We have breakfast reservations at 8:05 AM the next day at Magic Kingdom and I'm afraid the kids will be zonked before we even get started. What is the likely time we'll get to our resort given our 8:30 PM landing time?

can you change your breakfast reservation? Which restaurant is it --Crystal Palace or Cinderella's Table? Crystal Palace will usually have alternatel times.

Uber, give up the breakfast, or both. Plus do your kids really want their first hour in Magic Kingdom spent eating? Kind of anticlimactic...we’re heeeeeere!!! Let’s eat!

Can you try and see if the airline can put you on a different flight? i have fought back when they have done that to me.

Generally if your flight schedule changes by more than 1:30, the airline will give you a lot of flexibility to change to another flight of your choosing without any change fees or increased fare. Using a schedule change to your advantage is a long-time favorite among road warriors. You just need to call and say your flight schedule changed significantly and it doesn't work for you, and tell them what flight you want to get on instead. Have done this probably 5 or 6 times over the years and it has never been an issue.

I think the opportunity to walk through part of the park without crowds and then ride a handful of rides without lines is worth it.

There is no “without crowds” anymore. Main Street opens to everyone at 8am, no breakfast required. And you will get at most one ride in before the non-breakfast people arrive. But it’s your money.
