I did trials and came up with this: - bring to boil and simmer 3 hours pot of water with halved large onion, carrots, celery, mushroom, cut up potato[any kind will do], any other tray root veggies, spices salt pepper , parsley. Use to moisten the stuffing and large batch of it can be used for gravy base [add mushrooms sauteed in margarine and flour to thicken]. -strain it - saute chopped onion and celery in margarine -cube and bake n a low heat to dry out whatever bread she deems appropriate - egg subs to bind like tofu don't work Mashed potatoes- after whipping remove some and add margarine. Do the rest for everyone else with butter /sour creme. The vegan was not great for taste tester. +1 I am not vegetarian but like vegetarian food options too. People who consider it suffering are narrow minded and likely unhealthy. Stove Top, Pepperidge Farm both make stuffing packets that don't have chicken broth. Just add some nuts (i like to add pecans or almonds) to give it a hearty taste. |

Roasted chestnuts can give it some meatiness. Or pecans or walnuts.
I also like mine with a mix of fruit, like rehydrated dried apricots and apples. I like EVOI better than fake butters but YMMV. |
Some people are vegan (strict vegetarian) for actual medical reasons. Be sure to let them know that butter in your stuffing matters more to you than whether or not they wind up on dialysis or waiting for a kidney transplant (just as an example). |
| I would use vegetarian butter than bullion to replace the broth and smart balance butter alternative to replace the butter. It will be basically the same as regular stuffing. You can add some pecans for protein if she likes nuts. |

This is SO good- I don't even typically like stuffing but I love this. You could use vegan margerine instead of butter.

Just use whatever stuffing recipe you want and use olive oil to sautee the vegetables and vegetable broth. I wouldn’t use any fake butter, gross.
I usually whisk an egg into the broth before adding it to my bread. You could try a flax egg or probably skip all together. |
You could probably use oil instead of butter. Growing up my mom always used margarine, it was the 80s where there was a butter-is-bad movement, so I can't get wound up over stuff like this. JMO. |
