Mac and cheese + big ass salad. Use vinaigrette dressing; the mac and cheese is really rich and needs something acidic to cut it.

Fettuccine Alfredo + lots of veggies mixed in. I toss with asparagus, broccoli, bell peppers, snow peas, peas, sun dried tomatoes, black pepper, grated parm, and sometimes fresh parsley.

Veggie Panang Curry. I add extra frozen broccoli (just nuke it and stir in with the curry) and sometimes pineapple. It's highly caloric, so you can make extra rice and split the saucy veggies (especially if you add more veggies and/or tofu).

Veggie burgers, Chana masala, polenta with carrots and spinach, frozen naan, scallion pancakes. Eggplant cutlets are good to make a quick parmigiana, with store bought sauce and mozzarella cheese.

Yes! I'm a PP. I used to make a casserole of this and take leftovers for lunch all week. Super easy and so yummy.

We just had the multigrain and vegetable (frozen) meal this week and were so surprised at how good it was!

OP again - I love all these suggestions. The masala burgers especially sound delicious- the fettuccini with extra veggies mixed in sounds right up our alleys. We will kick this Indian takeout habit yet! Or knock it down to twice a week.

I am not a fan of the masala burgers. But I do love the chana masala (great tip from a pp to add extra chickpeas to stretch it!).

I love a lot of the items listed, but just reading them in the posts makes me realize how carb-heavy so much of the frozen vegetarian meals are. I do also like a lot of TJ's premade fresh salads, some have a good amount of veg based protein.

Miso Ginger broth + chicken cilantro mini wontons (you can use their veg potstickers). I heat the broth, add extra garlic, Korean red pepper flakes, and a lot of chopped scallion. Add the wontons and whatever extra veg you like.

Black bean soup + blue tortilla chips + cheddar/green onion/sour cream/etc.

The Kung Pao cauliflower isn't bad, either.
