How long should I give it to decide if the new nanny is working out?

I have no advice. We moved back to the States in 2008 and left our nanny behind. It's been exactly a year and my kids still talk about our old nanny and how they miss her, and my kids are 4 and 5 years old. Your old nanny was clearly an integral part of their lives, so your son is likely mourning this loss. Maybe he feels like he did something wrong to make her go? I don't know. Perhaps you can suggest that the new nanny do something special with them that they don't usually get to do? But definitely acknowledge your son's loss.
