Well his father profited from quite a few Jews in Brooklyn who rented his buildings so maybe the father changed it and not the grandfather so as not to scare off customers.

I had not seen this before I posted, but looks like I was onto something. Fred Trump supposedly claimed to be of Swedish decent so as not to scare off Jewish tenants.

The context is that he publicly mocked a Jew for changing his name. Specifically, John Oliver's former boss.
