Does he eat nuts? Lots of protein and fat there to get him through the morning.
Try giving him a few handfuls of nuts in addition to whatever else you have. Or add peanut butter to his english muffin. Or in a wrap (peanut butter and banana.) Or try almond milk instead of cow's milk. Seeds are similarly filling and nutritious. If he's ok with texture, try sprinkling hemp seeds, chia seeds, or flax seed on cereal or on top of the cream cheese when you give him a bagel or english muffin. Sunflower seeds are great, too. I buy them already shelled at Trader Joes. We usually get two bags -- one salted and one unsalted -- and mix them together. Delicious by the handful or you can add them to cereal etc. |

Recipe for oatmeal pancakes:
1 3/4 cup of oats (I use the quick-cooking variety since the rolled oats are already chopped) 1/2 cup of flour (I use whole wheat) 1 Tbsp sugar 1 tsp baking powder 1 tsp baking soda 1 tsp cinnamon 1/4 tsp allspice 1/4 tsp salt 2 eggs 2 cups of buttermilk Mix dry ingredients and then add eggs, buttermilk. This makes quite a few. I cook them all and freeze the leftovers. Recipe for pumpkin pancakes: 1 1/2 cup of flour (whole wheat) 1 Tbsp brown sugar 2 tsp baking powder 1/2 tsp baking soda 1/2 tsp nutmeg 1/2 tsp cinnamon 1/4 tsp ginger 1/4 tsp cloves 1/4 tsp salt 1 egg 1 1/2 cups of buttermilk 1 cup canned pumpkin (I feed the leftover in the can to my dog )
1 tsp vanilla Mix dry and then add wet ingredients. Freeze leftover pancakes and put in toaster to reheat. |
