Eating less meat or maybe none

It's actually pretty easy. Both our kids turned vegetarian a few years ago and I grew up mostly vegetarian.

There are tons of recipes out there and I do just use Quorn or veggie crumbles (not the healthiest to always do soy) as ground beef substitutes in Mex casseroles etc.

Just make a list of options for breakfast, lunch and dinner and make sure you have basic ingredients on hand. A pressure cooker is nice to have for cooking beans and rice more quickly.

Here are some meals we have:
veggie chili, tons of variations available
Asian
Indian
Lentil Rice casserole
French Lentil salad with sweet mustard vinegarette
Mexican Corn Bean Salad
Quinoa salad, tons of variations
Anything with avocados (good Tuscan bread toasted and smeared with avocado and sprinkled with sea salt and pepper is to die for
Hummos sandwiches stacked with spinach and peppers
Egg broccoli cheese quiche
Veggie soup, tortellini soup, potato soup etc
Pasta, veggie lasagna
red lentil soup with coconut milk
Sweet potatoes with blue cheese and nuts baked as a casserole with fresh thyme
veggie burgers with sweet potato fries and salad
grilled mushroom and veggies

Keep these on hand:
olive oil
cans of a variety of beans, including fat-free refried
tortillas
good bread
cheeses
a variety of nuts
frozen fruits and veggies
pasta
sauces
garlic/onions, lemons and limes
buy up various ready made stir fry and mexican sauces
salad fixings including toppings, nuts, croutons, good dressings

We're also trying to eat less meat. I need to limit carbs, and DH has IBS and is sensitive to beans, so we have to work around some limitations.

Gado gado (Indonesian salad with peanut sauce) is a great meal. It can be made in a number of different ways.

In it's simplest and easiest form, I defrost pre-chopped and pre-cooked vegetables. (I've been doing collard greens, french cut green beans, and a little sweet corn.) I add this sauce. (I had to create a non-spicy verion.) It sounds strange but it's a delicious tangy peanut sauce:

1..5 cups salted peanut butter (a 16 oz jar)

1.5 cups water

.5 cup ketchup

.25 tsp garlic powder

.3 cup vinegar

Simmer and stir all ingredients until smooth.
