I, too, adore roasted veggies. Here are a few other ideas, though:
stir fry diced garlic in sesame oil for a min or so, then add green beans and stir fry another min, then add a splash of water and cover and cook for 3-4 min, then uncover and add a splash of soy sauce and stir fry 1 more minute corn on the cob (you can even buy the cobs frozen in winter) with butter, salt and a squeeze of lime juice bake a sweet potato wrapped in tin foil for 45 min on 350 degrees, then open and rough mash with a fork, add a little butter and shake of cinnamon or maple syrup salad of diced tomatoes, cucumber, and red onion, tossed with evoo and lemon juice - you can add crumbled feta to this steamed green beans rinsed in cool water, then tossed with cherry tomatoes and balsamic salad dressing raw carrots and red peppers dipped in ginger salad dressing carrots sliced into coins, cooked for 5-10 min in butter, orange juice and a little honey |

Another yes to Salads. My kids prefer raw veggies - tomatoes, cucumbers, spinach, bell pepper, sugar snap peas, carrots, red onion, celery and lettuce. Broccoli, cauliflower.
Corn on the cob. Frozen french style green beans - microwave and top with slivered almonds and parmesan (or shredded cheese). Cooked carrots. |

We roast everything too! I toss everything in the pan so no extra dishes.
I love using Trader Joe's garlic oil or Wegmans basting oil to add a little extra flavor. We also love roasted broccoli and aparagus tossed with cracked pepper & olive oil and then mix in parmesean cheese when they are done. A recent favorite is to buy pre-chopped butternut squash or sweet potatoes and toss in melted butter, some brown sugar, and pepper and roast. Another favorite is corn on the cob - cut the kernels, and cook in a frying pan with butter/olive oil, grape tomatoes sliced in half and tons of basil. SO good and simple! I added some zucchini in this summer too. Don't know if have a grill or use it in the winter, but grilled veggies are great too. Green beans, zucchini, asparagus, broccoli, etc. We toss in olive oil or flavored oil and salt/pepper. Kabobs are fun too, lots of different veggies you can add. |
