Ugh, it lingers that long just with vegetable oil! I love latkes but it's so gross to step into the house 5 days later and still get a whiff of latke. It's the major reason we only do them once a year (because they're not actually that much work if you have a food processor). By the time the smell is out, no one wants to even think about them for months!
