melted. Good swiss gruyere in a well-done fondue or the velveeta stuff on nachos. Melted blue with caramelized onions over pasta. Melted brie on an apple. Melted raclette cheese with cornichons and potatoes. Melted mozzarella on anything.

Sharp cheddar with Triscuits and slices of salami.

Chèvre with beets, arugula, EVOO & balsamic vinegar

THere's an AWESOME Bakes brie recipe from Williams Sonoma (basically, sauté apples, butter, nutmeg and sugar until the apples are soft but not mushy. put brie on pastry dough. put apples on brie. wrap all in dough and bake for 30 min. serve with water crackers. It's beyond decadent. and is actually really good from the fridge the next day!

Also, fresh mozz with spinach, tomatoes, chicken and balsamic vinaigrette - basically a caprese salad,

PP again - W.S. recipe (I'd forgotten it was supposed to be cardamom instead of nutmeg. I prefer nutmeg, but cardamom is good too. Cinnamon is also OK, but the more unusual spices are what make it really good. (allspice works well too, just FYI)

This is a snack my 5 YO will make for my husband and me. So cute. And I must admit, it's pretty delicious!
