When we make this I add white pepper, salt and nutmeg, to taste, to the sauce, sometimes cayenne pepper as well, depending on the audience.

Then we saute breadcumbs in butter and sprinkle that and parmesan on top of the dish, then broil.

I cut into small florets, use about a head of garlic (peeling all cloves), use a bunch of thyme pulled off the stem, coat with olive oil, add salt and pepper, and roast at 400 for about 45 mins to an hour - stirring every 15 mins. It gets good and brown from caramelization and is delicious!!!!!

I steam the head whole (after trimming outside) and then pour white sauce over it...YUM. Add a sprinkle of nutmeg and done.

Second cauliflower steaks! I use Indian spices - cumin, coriander, turmeric, and of course salt and pepper.

DH likes this one - http://www.kimshealthyeats.com/sriracha-cauliflower-bites-with-peanut-dipping-sauce/
