OP, I think you're overthinking it. Go with one of the middle names you already picked. Elizabeth, Claire, etc.

Also wanted to add that my family is Polish (Mom's birth name is actually Janina), so nice-sounding family names - much less pronounceable ones - on that side are few and far between! DHs family is huge so most of the family name ops on that side have been used.
